Role
An Experienced Knife Hand is required for a new state-of-the-art abattoir just nearing completion close to Shanghai in China. The abattoir is set up to process only imported Australian cattle, and our client wants the leadership team to be from Australia to ensure consistency in the processing systems to supply unique Australian beef to the China market.

Description & Responsibilities
Reporting directly to the Operations Director, this position involves processing of whole cattle carcasses into designated portions, with a high level of accuracy and care, to meet order requirements. As this is a leadership role the candidate must be able to demonstrate this aspect of the role within established abattoirs.

Specific duties to include:  

• Ability to lead meat processing teams as well as being hands-on operator
• High standard of work quality
• Understands different cutting methods and be able to adhere to customer specifications
• Develop and implement cutting standards and train junior/senior staff to improve cutting skills
• Ensure the product quality meets the management expectations
• Report to the QA manager and Operation Director in regards to any quality issues
• Have the ability to multitask throughout the day

Requirements

• 5+ years working experience in either boning, slicing or slaughtering tasks in Australian established abattoirs
• Continuous improvement mindset, a team player
• Competent Knife Skills and Food Processing experience essential
• Filleting/Meat Processing experience highly desirable
• Experience working within strict hygiene requirements
• Commitment to high performing WHS and quality standards
• Prepared to undergo in-house training to increase product knowledge and further develop skills as required
• Must be able to speak Mandarin fluently

Location
The role is located China (near Shanghai).
